  • Q: If I use a mail-order pharmacy, can I still save money on my eligible pancreatic enzymes?
    A: Yes. You can use your loyalty card every time you refill your prescription and save money on your copay.
  • Q: What is the Savings Request Form?
    A: The Savings Request Form is something you use only if the pharmacy does not process your claim with the loyalty card. Fill out the Savings Request Form and mail, fax, or email it with a copy of the pharmacy receipt using the contact information listed on the form. Be sure to complete all sections, as incomplete information will delay reimbursement.
  • Q: Help! I am having trouble logging in to the LIVE2THRIVE® website. What do I do?
    A: If you forgot your user ID and/or password, you can recover your lost credentials.

Grilled Salmon and Kale Tacos With Tropical Salsa

You'll feel like you've been swept away to paradise as you enjoy this tasty and nutritious taco dish! Packed with omega-3 fatty acids and vitamin D, this fresh and zesty entree will be a welcome addition to your recipe box. Cut down on the chipotle peppers and jalapeños for a less spicy option.

Ingredients

Salmon and Kale Tacos
4 corn tortillas 2 (6 oz. each) salmon fillets
2 tsp. chipotle peppers in adobo, minced ½ tsp. kosher salt
½ tsp. black pepper ½ tsp. cumin
1 cup kale, cleaned and chopped ¼ cup radish, julienned
Cilantro (optional)
Tropical Salsa
1 Tbsp. orange juice 2 tsp. lime juice
1 peach, pitted and finely diced 1 mango, pitted and finely diced
1 jalapeño, cleaned and minced ½ cup cucumber, finely diced
½ cup red onion, minced 1 tsp. kosher salt

Directions

  1. Combine salsa ingredients and set aside. You may prepare this ahead of time.
  2. Warm a grill, grill pan, or skillet over medium-high heat. Coat with olive oil or pan spray.
  3. Pat salmon dry with a paper towel, then sprinkle salt, pepper, and cumin over each side of both fillets.
  4. Grill the salmon fillets for 10 minutes on each side or until internal temperature reaches 145°F, turning halfway through to create X-shaped grill marks (if grilling).
  5. Remove salmon from pan and slather minced chipotle peppers on both sides.
  6. Warm tortillas on the stove or in the oven for 2 minutes until pliable.
  7. Remove warmed tortilla from stove, place on plate, and top with 1 Tbsp. salsa and ¼ cup of kale.
  8. Slice salmon into strips widthwise and place on top (each taco should contain about a half of a fillet).
  9. Garnish with radish and cilantro.

Storage

The salmon can be refrigerated for up to 3 days. The salsa can be refrigerated for up to 5 days.
